Pickled Channelled wrack

Ingredients

Cider vinegar

Rehydrated Channelled wrack

Sugar (to taste)

Whole spices (to taste) peppercorns, cloves, cinnamon, star anise etc.

1 sterilised jar.

Heat the cider vinegar gently, add all the ingredients and stir till the sugar has dissolved. Pack the jar with the seaweed and pour in the vinegar mixture and seal. Serve with goats cheese and beetroot.
