Elderflower champagne with sugar kelp

A fragrant and refreshing sparkling wine fermented naturally with the yeast from the Elderflower blossoms with added fronds,(leaves), of Saccharina latissima seaweed.
We gather the sweet scented creamy white flower heads of the Elder Tree when they appear annually from late May to early June. At the same time we harvest some Sugar Kelp fronds from the pristine south Kerry waters on the Wild Atlantic way.
And so the bounties of the land and the ocean are combined to help produce an exhilarating and delicious sparkling wine that captures the true essence of summer.
